Ingredients

  • 3 cups rolled oats
  • 1 1/4 cups raw pecans, roughly chopped
  • 1/2 cup raw pepitas/pumpkin seeds
  • 2 Tbsp ground flaxseed
  • 1/4 tsp sea salt
  • 2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/3 cup coconut oil
  • 1/3 cup pure maple syrup (add 1-2 Tbsp more if you want it sweeter)
  • 1/3 cup pumpkin puree
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 325 degrees F. Line a baking sheet with a silicone mat.
  • Add the oats, pecans, pumpkin seeds, ground flaxseed, spices, and salt together in a large bowl. Mix with a spatula until well combined.
  • In a small pot over medium-low heat, add the coconut oil, maple syrup, pumpkin puree, and vanilla and whisk until melted. Pour over the dry ingredients and mix with a spatula until well combined.
  • Spread the mixture evenly onto the baking sheet and bake for 40 minutes, lightly flipping the granola at the halfway point and packing it back down into the pan.
  • Once the granola is golden brown, remove from oven and let it cool completely. It will crisp up even more as it cools.
  • Once cooled, break up the clusters and then transfer to an airtight container. Enjoy!
