Preheat oven to 325 degrees F. Line a baking sheet with a silicone mat.
Add the oats, pecans, pumpkin seeds, ground flaxseed, spices, and salt together in a large bowl. Mix with a spatula until well combined.
In a small pot over medium-low heat, add the coconut oil, maple syrup, pumpkin puree, and vanilla and whisk until melted. Pour over the dry ingredients and mix with a spatula until well combined.
Spread the mixture evenly onto the baking sheet and bake for 40 minutes, lightly flipping the granola at the halfway point and packing it back down into the pan.
Once the granola is golden brown, remove from oven and let it cool completely. It will crisp up even more as it cools.
Once cooled, break up the clusters and then transfer to an airtight container. Enjoy!
