Make the cinnamon sugar topping by combining sugar and cinnamon in a large, shallow bowl. Make the maple glaze by whisking the powdered sugar, cinnamon, maple syrup, maple extract, and milk together until thick and smooth.
Preheat the air fryer to 350 degrees F. Remove biscuits from the tube and use a 1 inch round biscuit cutter (or similar size like a bottle cap) and cut holes out of the center of each biscuit.
Brush melted coconut oil on the bottom of the air fryer basket. Place about 4 biscuits in the air fryer in a single layer, not touching each other. Cook for 4-5 minutes (mine took 5) or until golden brown. Transfer to a wire rack. Repeat process with the last 4 biscuits. You can also cook the donut holes for 3 minutes.
For the cinnamon sugar topping, brush hot donuts with coconut oil and roll them in the cinnamon sugar mixture. Place back on the wire rack and enjoy warm. For the maple glaze, dip cooled donuts in the glaze and place on the wire rack for a few minutes so the glaze can firm up. Enjoy!
