Preheat oven to 400 degrees F. Grease an 8×8 pan.
In a liquid measuring cup, add almond milk and apple cider vinegar. Stir and let it sit for 5 minutes.
In a large bowl, add the flour, cornmeal, sugar, baking powder, salt, and ground flaxseed. Stir until well combined.
Add the almond milk mixture and melted coconut oil to the bowl. Stir until combined. Let it sit for 5 minutes (important!).
Pour batter into pan and bake for 20-25 minutes, until toothpick comes out clean. Enjoy!
