Smoked Paprika Cheddar Vegan Cheese Ball

I love cheese and crackers and I’ve been wanting to find a good vegan cheese recipe. This smoked paprika cheddar vegan cheese ball is so tasty and delicious.

Smoked Paprika Cheddar Vegan Cheese Ball

Ingredients

  • 1 1/2 packed/full cups cashews, soaked for at least 4 hours and drained
  • 1/2 cup nutritional yeast
  • 1 tbsp juice from a lemon
  • 1/4-1/2 tsp onion powder
  • 1 1/2 tsp dried parsley
  • 1/2 tsp smoked paprika
  • 1 big clove garlic, minced
  • 2-3 tbsp water, more as needed
  • 1/2 tsp sea salt
  • Black pepper, to taste
  • 1 cup pecans, chopped

Instructions

  • Place all the ingredients except for the pecans in the bowl of a food processor. Blend until smooth, adding water as needed. Make sure it is not runny. You are looking for a very thick consistency (think really thick hummus). Scoop out and form into a ball and roll in the chopped pecans. Wrap in plastic wrap and refrigerate until firm, about 4 hours. Serve with crackers and enjoy!
