Ingredients

salad

  • 2-3 handfuls of arugula (about 3 cups)
  • 1/2 cup uncooked quinoa
  • 2 peaches, diced
  • 1 avocado, diced
  • 1 cup fresh corn
  • 1/3 cup basil, chopped
  • 1/4 cup shelled pistachios
  • 1/4 cup vegan feta

dressing

  • 3 Tbsp extra virgin olive oil
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp pure maple syrup
  • 1 tsp dijon mustard
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper

Instructions

  • Cook quinoa according to package’s instructions. Let it cool until it reaches room temperature. 
  • Make the dressing in a small bowl. Whisk until well combined. 
  • In a large bowl, add all the salad ingredients. Pour dressing all over the top. Toss salad until everything is well combined. Enjoy!
