Super Seedy Granola Bars (vegan, gluten-free, nut-free)

These super seedy granola bars are easy to make, full of nutrient dense ingredients, customizable, and taste amazing. They are a school friendly snack since they are nut free.

Ingredients

  • 1/4 cup coconut oil
  • 1/2 cup tahini (you can use any nut/seed butter)
  • 1/3 cup pure maply syrup add a little more if you want it sweeter
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt add a little more if your nut/seed butter is not salted
  • 1 1/2 cup rolled oats or quick oats (quick oats will hold a little better)
  • 1 1/2 cup crispy brown rice cereal 
  • 3 Tbsp chia seeds
  • 3 Tbsp ground flaxseeds
  • 3 Tbsp hemp seeds
  • 1 Tbsp sesame seeds
  • 1/2 cup raw pumpkin seeds

Instructions

  • Line an 8x8 baking pan with parchment paper and set aside.
  • In a large bowl, stir together the oats, rice cereal, chia seeds, ground flaxseeds, hemp seeds, sesame seeds, and pumpkin seeds. Set aside. 
  • In a small sauce pan/pot, add the coconut oil, tahini, and maple syrup. Heat over medium low heat until melted and smooth. Remove from heat and add the vanilla and salt. Stir until combined. Add to the large bowl with the dry ingredients. Using a spatula, stir until everything is evenly coated and combined.
  • Transfer to the lined pan. Firmly press the mixture down with the spatula or your hands. To make sure everything is packed in, you can use the bottom of a glass or jar and firmly press it down with that. This ensures the bars will hold together better. Place in the freezer for at least 1-2 hours before cutting them. Cut into 12 bars and tightly wrap each in plastic wrap or parchment paper or store in an airtight container in the freezer. You can let them sit for 5 minutes after you take them out of the freezer before eating. Enjoy!
