This tomato corn feta salad is the perfect summer salad or side dish made with the freshest ingredients. It is loaded with juicy tomatoes, sweet corn, and vegan feta.
Boil corn cobs for 2-3 minutes. Drain and set aside to cool. Prep other ingredients while cooling.
Once corn is cooled, cut off kernels. Add to a large mixing bowl along with the rest of the ingredients. Toss until well combined. Taste and adjust seasonings if needed.
Serve right away or place in the fridge until chilled. Enjoy! I like to eat it with a spoon, on tacos, in burrito bowls, or with chips.
