Tomato Corn Feta Salad (vegan, gluten-free, oil-free)

This tomato corn feta salad is the perfect summer salad or side dish made with the freshest ingredients. It is loaded with juicy tomatoes, sweet corn,  and vegan feta.

Ingredients

  • 4 cobs corn, shucked
  • 2 cups halved cherry tomatoes
  • 1/4 cup red onion, diced small
  • 1/4 cup cilantro, chopped
  • 2 stalks green onions, chopped
  • 2 limes, juiced
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4-1/2 tsp red pepper flakes, optional

Instructions

  • Boil corn cobs for 2-3 minutes. Drain and set aside to cool. Prep other ingredients while cooling. 
  • Once corn is cooled, cut off kernels. Add to a large mixing bowl along with the rest of the ingredients. Toss until well combined. Taste and adjust seasonings if needed. 
  • Serve right away or place in the fridge until chilled. Enjoy! I like to eat it with a spoon, on tacos, in burrito bowls, or with chips.
