These easy vegan air fryer apple fritters are one of my new favorite fall bakes. They are ready in under 30 minutes, not fried, and studded with sweet apples. I love a good apple fritter and these are healthier and way easier to make than the traditional ones.
In a large bowl, add the flour, sugar, baking powder, salt, and cinnamon. Whisk until well combined.
In a medium bowl, add the applesauce, melted coconut oil, almond milk, and vanilla extract. Whisk until well combined. Make sure all the wet ingredients are room temperature so the coconut oil doesn’t harden.
Add the wet ingredients to the dry. Stir with a spatula until just combined. Careful not to overmix. Fold in chopped apples.
Use a large cookie/muffin scoop or a 1/3 measuring cup and scoop batter onto your parchment lined air fryer pan. You should get about 5 fritters. Air fry at 400 degrees F for 8-10 minutes, or until tops are golden brown. It might be more or less depending on the size of your fritters so keep an eye on them. If you don’t have an air fryer, you could bake them at 400 degrees F for 10-15 minutes, or until tops are golden brown.
Let the fritters cool for 15 minutes. Make the glaze by adding the powdered sugar, milk, and vanilla in a small bowl. Mix with a spoon until smooth and thick glaze forms. If it is too thin, add more powdered sugar. If it is too thick, add a teaspoon more milk.
Spoon glaze liberally all over the tops of the fritters. Let it set for 5 minutes and enjoy! Best when eaten fresh. The fritters will soften and lose their crisp when stored.
Notes
If you don't have an air fryer, you can bake the fritters at 400 degrees F for 10-15 minutes, or until they are golden brown. Keep an eye on them as every oven is different.
