Easy Healthy Cookie Dough for Two
Are you a cookie dough lover? Sometimes I just don’t want to turn on the oven (especially in this heat right now) but I still want a cookie! This cookie dough is the perfect pick me up snack or dessert when 3pm hits or when 9pm hits. For some reason, those two times are when I’m craving something sweet but want a healthier option. This easy peasy cookie dough can be made in just 5 minutes in one bowl! Literally so simple and there is no fuss. It’s also filled with healthy fats, fiber, and protein. It’s oil-free, refined sugar free, gluten-free, and vegan! They travel well too if you roll them into bliss bites. Take them to work, school, or even on the airplane!

Ingredients
- 1/4 cup oat flour
- 2 tbsp coconut flour
- a pinch of sea salt (adjust to taste)
- 2 tbsp natural almond butter (or any nut butter)
- 1 tbsp pure maple syrup
- 1 tbsp applesauce
- 1/4 tsp vanilla extract
- 2 tbsp dairy free chocolate chips
Instructions
- In a small bowl, combine the oat flour, coconut flour, and salt. Mix well.
- Then add the almond butter, maple syrup, applesauce, and vanilla. Mix until well combined.
- Fold in the chocolate chips. Enjoy! Store in the fridge or freezer!
