Acai Berry Smoothie Bowl

I am a big fan of smoothie bowls and think they are the perfect breakfast or even dessert. Packed with antioxidants, superfruits, and vitamins, this acai berry smoothie bowl is a great way to start off your day. I love blending one of these up after a good workout. It’s refreshing and so easy to make. Also, this is customizable to your personal favorites. Top it with any fruits and nuts you desire. I love to mix some of my homemade granola into this smoothie bowl too.

You can buy the frozen acai berry superfruit packs at Sprouts (or maybe your local grocery store). I get the Sambazon brand and make sure you get the pure unsweetened kind so there aren’t any added sugars. These packs are the best! Also, it’s way cheaper to make your own acai berry bowls at home. I always crave an acai berry bowl when we pass by restaurants that sell them, but I never want to pay $6-8 for one. This is definitely a must have in my freezer.

Acai Berry Smoothie Bowl

Ingredients

  • 1 frozen acai berry pack
  • 1 banana
  • 2 handfuls of baby kale or spinach
  • 1 cup of frozen pineapple
  • 1 cup of frozen blueberries
  • 3/4 to 1 cup of unsweetened plain almond milk (or any other non-dairy milk)

Instructions

  • Run your frozen acai berry pack under warm water for 15 seconds. Now it will be easy to open the pack and stick it in the blender.
  • Add all the other ingredients into the blender. Blend until smooth. It will be very thick. Add more almond milk if you like it runnier. (I personally like it a little thicker so I can use a spoon and eat it.)
  • Pour into bowls and top with whatever toppings you would like. I topped mine with fresh raspberries, unsweetened shredded coconut, pepita seeds, and chia seeds. I like to change it up every time I make these. 🙂
