Ingredients
- 3/4 cup quinoa, uncooked
- 3 cups spring mix (about 2 big handfuls)
- 2 cups sliced strawberries
- 1/2 cup vegan feta
- 1/2 cup pecans, chopped
- 1/2 cup pickled red onions
maple lemon dressing
- 1/4 cup lemon juice
- 2 Tbsp extra virgin olive oil
- 2 Tbsp pure maple syrup
- 1/4 tsp sea salt
- 1 tsp dijon mustard
- 1/4 tsp black pepper
Instructions
- Cook quinoa according to package’s instructions. Let it cool to room temperature.
- In a small bowl, add all the dressing ingredients and whisk until well combined.
- Add all salad ingredients into a large bowl. Pour dressing all over. Toss salad until well combined. Enjoy!
