This super easy strawberry quinoa salad is refreshing, vibrant, and so delicious. It’s packed with quinoa, fresh strawberries, and a maple lemon dressing. You have to make this during peak strawberry season this spring and summer.

I love fruit in salads because it adds a juicy, refreshing bite. If you are one of those people who don’t like fruit in salads, you need to try this. The quinoa and pecans add a nutty flavor and the maple lemon dressing adds a touch of sweet and tang to the salad. This salad is filling, light, and nourishing.

Easy Strawberry Quinoa Salad (vegan, gluten-free, refined sugar free)

Ingredients

  • 3/4 cup quinoa, uncooked
  • 3 cups spring mix (about 2 big handfuls) 
  • 2 cups sliced strawberries
  • 1/2 cup vegan feta
  • 1/2 cup pecans, chopped
  • 1/2 cup pickled red onions

maple lemon dressing

  • 1/4 cup lemon juice
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp pure maple syrup
  • 1/4 tsp sea salt
  • 1 tsp dijon mustard
  • 1/4 tsp black pepper

Instructions

  • Cook quinoa according to package’s instructions. Let it cool to room temperature. 
  • In a small bowl, add all the dressing ingredients and whisk until well combined. 
  • Add all salad ingredients into a large bowl. Pour dressing all over. Toss salad until well combined. Enjoy!
