Chickpea Peanut Butter Chocolate Chip Blondies (vegan, gluten-free, refined sugar free, oil-free)
These chickpea peanut butter blondies are fudgy, delicious, and the perfect sweet and salty treat. They taste like half baked cookie dough and no one would ever know that they are made from chickpeas! It’s completely flourless, refined sugar free, oil-free, gluten-free, and vegan too. They are packed with fiber and protein, making it a healthy dessert, snack, or even breakfast!
Because these blondies are flourless and made with chickpeas and peanut butter, you get a super fudgy texture that is so rich and decadent. You definitely can’t taste the chickpeas because the peanut butter and pure maple syrup completely mask it. Instead, you get a delicious, yet healthy, peanut butter blondie that is studded with chocolate chips.
These chickpea peanut butter chocolate chip blondies are incredibly easy to make. You just throw everything into your food processor or high speed blender, except for the chocolate chips, and blend until it turns into a smooth cookie dough. Then stir in the chocolate chips, press it into the pan, and bake! That’s it! The minimal clean up might just be the best part too!
I love that you get a dose of protein and fiber with these blondies while still satisfying your sweet tooth. My kids loved them and had no idea they were made with chickpeas! It’s kid approved, which is a win for me!

Chickpea Peanut Butter Chocolate Chip Blondies (vegan, gluten-free, refined sugar free, oil-free)

Ingredients
- 1 can chickpeas, rinsed well and drained
- 1/2 cup natural peanut butter
- scant 1/2 cup pure maple syrup
- 2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 cup oat flour
- 2 Tbsp ground flaxseed
- 1/4 tsp sea salt
- 1/2 cup dairy-free chocolate chips
- flaky sea salt, for topping
Instructions
- Preheat oven to 350 degrees F. Line a 8x8 pan with parchment paper.
- Add everything into a food processor and blend until smooth. Add chocolate chips and stir with a spatula.
- Pour batter into the lined pan. Bake for 25 minutes. Let it cool in the pan completely so it can set. Sprinkle flaky sea salt on top and enjoy!
