Apple Pie Energy Bites (vegan, gluten-free, no added sugar)

These apple pie energy bites are the easiest kind of apple pie you’ll ever make. It requires no baking and literally 10 minutes to make from start to finish. Filled with nuts, oats, cozy spices, and of course apples, they will remind you of apple pie, but without the hassle. Have them for breakfast, pre/post workout, snack, or dessert!

These apple pie energy bites are so easy to make. Just throw everything in your food processor and roll it into balls. The ingredients are simple, healthy, and so nourishing. I used dates to keep these naturally sweetened and the nuts and apple chips add a slight crunch. The flavors are so comforting and perfect for fall. They will satisfy your craving for apple pie when you don’t have the time to make a pie.

Apple Pie Energy Bites (vegan, gluten-free, no added sugar)

These apple pie energy bites are made with dates, nuts, cozy spices, and apples. They will remind you of apple pie, but without the hassle.

Ingredients

  • 1 cup packed Medjool dates , pitted (about 11-12)
  • 1/2 cup walnuts or pecans (I used both)
  • 1/2 cup rolled oats
  • 1 cup dried apples chips, or any dried apples
  • 1/4 cup nut butter (I used pecan butter)
  • 1 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp sea salt
  • 1 scoop protein powder, plain or vanilla (I used Nuzest Just Natural, use code: NUTSABOUTGREENS15 to save $$) 
  • 1 Tbsp ground flaxseed
  • 1-2 Tbsp water

Instructions

  • Add everything in the food processor except the water. Pulse until combined. 
  • Add 1 tablespoon of water and pulse again until a dough starts to come/stick together. If needed, add a little bit of water, 1 teaspoon at a time, until the dough sticks together when you squeeze some in-between your fingers. 
  • Roll into balls (I used a 1.5 Tbsp cookie scoop) and place on a plate with parchment paper. Store in the fridge or freezer. Enjoy!
