This peaches and cream overnight chia oats takes less than 10 minutes to prep the night before for an effortless and delicious morning! It’s a combo between chia pudding and overnight oats and is incredibly creamy from the yogurt 🤤. The fresh and juicy peaches throughout make this the perfect summer breakfast! Recipe is below! 💫

Ingredients:
1/2 cup rolled oats
2 Tbsp chia seeds
2 Tbsp @bethanyspantry probiotic vanilla protein powder (use code: NUTSABOUTGREENS)
1/2 cup chopped peaches
1 Tbsp pure maple syrup, or to taste
1/4 cup plain or vanilla coconut yogurt (I used @harmlessharvest)
1 Tbsp tahini (or any nut/seed butter)
3/4 cup almond milk (or any non-dairy milk)

toppings:
coconut yogurt
diced peaches
drizzle of pure maple syrup

Add all ingredients except for the toppings in a glass jar or tupperware. Mix until well combined. Cover and place in the fridge for at least 4 hours or overnight. When ready to eat, stir it again and top with more yogurt, peaches, and a drizzle of maple syrup. Enjoy!

Healthy Strawberry Crumble Bars (vegan, gluten-fre Healthy Strawberry Crumble Bars (vegan, gluten-free, refined sugar free) 🍓

Anything with a crumble has my name on it! These healthy strawberry crumble bars have a perfectly sweet, jammy strawberry filling sandwiched between a melt-in-your-mouth gluten-free crumble that doubles as both the crust and the topping 🤤. Make it for this Memorial Day weekend and all summer long. It’s healthy enough for breakfast or dessert and just so delicious! Recipe is below, so make sure to hit save! 💫

Filling:
1 lb strawberries, quartered or diced
2 Tbsp coconut sugar
1 Tbsp cornstarch
1 Tbsp lemon juice 
1 Tbsp water

Crust/crumble:
1 1/4 cup oat flour
1 1/4 cup almond flour
3/4 cup old fashioned oats
1/4 tsp sea salt
1/2 tsp baking soda
1/4 cup coconut sugar 
1/2 cup melted coconut oil
1/4 cup pure maple syrup
1 tsp vanilla extract

Preheat oven to 350 degrees F. Line a 8x8 square pan with parchment paper. 

In a skillet over medium heat, add the filling ingredients. Stir until well combined and bring to simmer. Reduce heat to medium low and simmer for 5 minutes, stirring frequently. You want the strawberries to release their liquid, soften, and thicken up. 

To make the crust/crumble, add the oat flour, almond flour, oats, salt, baking soda, and coconut sugar to a large bowl. Mix with a spatula until well combined. Add the melted coconut oil, maple syrup, and vanilla. Stir until everything is combined and you get a thick batter. 

Press down 2/3 of the batter firmly until it is evenly pressed into the pan. Pour strawberry filling over the top. Then sprinkle the reserved 1/3 of the crumble over the top of the strawberry filling. 

Bake for 35-40 minutes or until top is golden brown. Allow bars to cool completely before slicing. I recommend placing them in the fridge for a few hours after it has cooled so it is easier to cut and eat. Enjoy!

Ingredients: 
fresh cherries, pitted
coconut yogurt (I used @harmlessharvest)
dark chocolate (I used @hukitchen)

Dip pitted cherries in yogurt and place on parchment paper. Freeze for 30 minutes. Melt your chocolate (option to add 1 tsp of coconut oil for a smoother chocolate) in 30 second increments in the microwave, stirring between each increment, until melted. Dip frozen yogurt cherries in the chocolate and place on parchment paper. Freeze until set. When you want to eat them, leave them out for 5-10 minutes to thaw a bit. Enjoy!

Ingredients:
3 cups fresh strawberries, quartered
1 1/2 Tbsp balsamic vinegar 
2 tsp pure maple syrup 
coconut yogurt (I used @harmlessharvest plain unsweetened)
desired toppings (I did homemade granola and pumpkin seeds)

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. 

Add strawberries, balsamic vinegar, and maple syrup to a medium mixing bowl. Stir until well combined. Transfer mixture to the lined pan. Roast strawberries for 25-30 minutes. Let it cool for 10 minutes. 

Serve over yogurt. Top with granola, pumpkin seeds, or whatever you desire. Enjoy!

Ingredients:
1 1/2 cup coconut flakes
3/4 cup raw pumpkin seeds 
2 Tbsp hemp hearts/seeds
2 Tbsp chia seeds
1/4 tsp sea salt
1/3 cup organic agave (I used @madhavafoods)

Preheat oven to 350 degrees F. Line a baking sheet with parchment or use a silicon mat.�
In a large bowl, add the coconut, pumpkin seeds, hemp hearts, chia seeds, and salt. Mix with a spatula until well combined. Add the agave and mix until everything is evenly coated and combined.�
Place about a 1.5 tablespoon sized clusters on the lined baking pan (I used a cookie scoop). Bake for 10-13 minutes, or until coconut flakes turn a nice golden brown. The clusters will spread in the oven a bit so when they come out of the oven, take a spatula and push the sides into the center of the clusters to shape them. Let it cool on the pan for at least 45 minutes. When they cool, they will harden into the clusters. Remove carefully once cooled. Enjoy! Store extras in an airtight container in the freezer. You can eat them straight from the freezer. �.

Ingredients: 
1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp water)
1 Tbsp avocado oil
3 Tbsp pure maple syrup
1 tsp vanilla extract 
1 cup almond flour
pinch of salt
1/4 tsp baking powder
1/4 cup dairy-free chocolate chips 
1/4 cup lightly crushed @reeliefoods sea salt plantain chips 

Preheat oven to 350 degrees F. Grease a mini cast iron skillet. Mine was about 4 inches in diameter. 

In a medium bowl, make the flax egg by mixing the ground flaxseed with water. Let it sit for 5 minutes to thicken. 

Then add the oil, maple syrup, and vanilla extract. Stir until combined. Add the almond flour, salt, and baking powder. Stir until combined. Fold in chocolate chips and plantain chips. 

Pour batter into your skillet and smooth it out with the spatula. Press some extra chocolate chips and plantain chips on top. Bake for 16-18 minutes until golden on top. 

Let it cool for 15 minutes. Top with ice cream and flaky sea salt if desired and enjoy!

Ingredients:
1 cup chopped mangoes
1 cup raspberries
1-2 Tbsp pure maple syrup, or to taste 
1 heaping cup coconut yogurt (I used @cocojune_organic)
melted dark chocolate (I used @hukitchen)
shredded coconut for topping, optional

Add mangoes, raspberries, maple syrup, and coconut yogurt to a bowl. Mix with a spatula until well combined. Pour onto a parchment lined baking sheet and spread evenly into a rectangle. Place in the freezer for 30 minutes. Pour melted chocolate over the top and evenly spread with a spatula. Sprinkle shredded coconut on top. Place in the freezer for at least 1-2 hours or until set. Chop and enjoy! I like to let it sit out for 5 minutes before I eat it. Store in the freezer.
