Sometimes you just want a healthy treat during this season of all the sugary desserts 😅. These 3 ingredient pomegranate chocolate peanut butter cups could not be any easier and satisfies those sweet cravings without giving you a sugar crash 👏. Keep these in your freezer so you can grab one whenever you want. The pops of pomegranate add a delicious juicy bite and cuts through the peanut butter and chocolate. It’s such a simple no bake healthy treat that will get you through all the stressful and busy days during the holidays. Recipe is below! 💫

Ingredients: 
your favorite chocolate (I like dark and used @hukitchen)
natural peanut butter (just peanuts and salt) 
pomegranate seeds 
flaky sea salt on top (optional)

Melt your favorite chocolate in the microwave in 30 second increments, stirring after each increment until smooth. Place a spoonful of melted chocolate in a mini silicone muffin pan (or you can use a regular size muffin pan). Place a spoonful of peanut butter on top. Then place a spoonful of pomegranate on top of the peanut butter. Drizzle some melted dark chocolate on top of the pomegranate and sprinkle some flaky sea salt if desired. Place in the freezer for at least 15 minutes to set. Carefully pop each cup out and enjoy! Store in an airtight container in the freezer. Let it sit out for 5-10 minutes when you want to eat one.

Ingredients:
10oz dark chocolate
1/3 chopped pistachios
1/2 cup pomegranate seeds
1/4 cup tahini 
Flaky sea salt 

Melt chocolate in the microwave in 30 second increments, stirring in between each increment until smooth. Line a baking sheet with parchment paper. Spread melted chocolate over parchment paper. Place dollops of tahini all over the chocolate and swirl with a stick or knife. Sprinkle pomegranate, pistachios, and sea salt all over. Freeze for 30 minutes or until firm. Break into pieces and enjoy! Store in the freezer.

Not a fan of pumpkin pie? Try these healthy sweet potato pie bars that are so easy to make, filled with cozy spices, and have the most dreamy creamy filling 🤤. It’s made with good for you ingredients and is completely vegan, gluten-free, and refined sugar free. The sweet potato filling is so good, I can just eat it by the spoonful 🥄. These bars are naturally sweetened and not overly sweet like most store-bought pies. It is perfect for the holidays, especially Thanksgiving coming up! Recipe is below, so make sure to hit save! 💫

Crust
1 cup oat flour
1 cup almond flour 
2 Tbsp coconut sugar 
1/4 tsp cinnamon
1/4 tsp salt
1/3 cup melted coconut oil (or vegan butter)
1 Tbsp pure maple syrup

Filling
4 cups peeled and diced sweet potatoes, steamed for 15 min (about 2 cups mashed)
1/3 cup coconut sugar (or brown sugar)
1/4 cup pure maple syrup
1/2 cup canned full-fat coconut milk (make sure the can is shaken well and the cream is mixed in with the water before using)
1 tsp vanilla extract
2 tsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
3 tbsp cornstarch
1/4 tsp salt

Preheat oven to 350 degrees F. Line an 8×8 pan with parchment paper.

To make the crust, add the oat flour, almond flour, coconut sugar, cinnamon, and salt to a bowl. Mix until well combined. Add the melted coconut oil and pure maple syrup. Stir until everything is well combined. Press mixture into the prepared pan and make sure it is packed into the pan evenly. Bake for 10 minutes. Remove from oven and let it cool while you make the filling.

Add all filling ingredients into a high speed blender. Blend until smooth and creamy. Pour filling over the crust. Smooth out the top and lightly drop the pan on the counter a few times to get rid of air bubbles. Bake in the oven for 30-35 minutes. Let it cool in the pan on a cooling rack for 1-2 hours then place in the fridge (uncovered) to cool and firm up overnight. Slice and enjoy! Top with coconut whip if desired! Store leftovers in an airtight container in the fridge.

Easy Pesto Cheese Twists (vegan) 

2 sheets of puff pastry, thawed 
6 Tbsp vegan pesto
1 bag @followyourheart Cheddar Shreds 
almond milk for brushing 

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone mat. 

Unroll the puff pastry and roll it out slightly to an even rectangle and smooth out any folds or creases. Add about 3 Tbsp of pesto on one half of the puff pastry. Sprinkle Follow Your Heart cheddar shreds on top of the pesto.

Fold the puff pastry over the cheese. Gently press down with your hands or a rolling pin to make sure the layers stick. 

Brush almond milk on top of the puff pastry rectangle. Sprinkle more cheddar shreds on top. Slice into strips about 1/2 inch wide. 

Take each end of the strip with your hands. Pinch ends and twist each end in the opposite direction a few times. Place on the prepared baking sheet. Lightly brush almond milk on top and sprinkle more cheddar shreds on top. 

Repeat all steps with the other sheet of puff pastry. Bake for 20-30 minutes or until golden brown. Enjoy warm!

Ingredients:
1 3/4 cups all-purpose flour 
1 1/2 tsp ground cinnamon
1/2 tsp sea salt
2 tsp baking powder
1/2 tsp baking soda
2 flax eggs (2 Tbsp ground flaxseed + 5 Tbsp water)
1/2 cup @madhavafoods coconut sugar
1/3 cup unsweetened applesauce
1/3 cup avocado oil (or melted coconut oil)
1/3 cup almond milk 
1 tsp vanilla extract
1 apple, peeled and chopped small (about 1 heaping cup)

cinnamon sugar swirl
1/2 cup @madhavafoods coconut sugar
2 tsp cinnamon

Preheat the oven to 350 degrees F. Line a 8x4 inch loaf pan with parchment paper.

In a large mixing bowl, make the flax eggs by combining the ground flaxseed with water. Stir and set aside to thicken for 10 min.

In a medium bowl, add the flour, cinnamon, salt, baking powder, and baking soda. Whisk until well combined.

In the bowl with the flax egg, add the coconut sugar, applesauce, oil, almond milk, and vanilla extract. Whisk until combined. 

Add the dry to the wet ingredients and use a spatula to mix until just combined. Don’t overmix. Fold in apples.

Make the cinnamon sugar by combining the coconut sugar and cinnamon in a small bowl.

Place 1/2 the batter into the lined loaf pan. Generously sprinkle 2/3 of the cinnamon sugar over the top of the batter. Pour the rest of the batter on top and sprinkle the rest of the cinnamon sugar on top. Swirl with a knife only a few times (don’t do it too much or else you won’t be able to see the layers). Bake for 65 min, or until a toothpick comes out clean. Let it sit in the pan for 10-15 min. Carefully remove bread from the pan and place on a wire rack to cool completely. Slice and enjoy!

Ingredients:
1 cup pecans
1 cup cashews 
1 cup walnuts
3/4 cup @go_raw sprouted pumpkin seeds
3 Tbsp pure maple syrup
1 1/4 tsp kosher salt (if using regular salt, use slightly less)
1 tsp cinnamon
1/2 Tbsp fresh rosemary, roughly chopped

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat. Add everything to a bowl and mix until well combined. Bake for 20 minutes, stirring halfway through. Let it cool for 15 minutes to crisp up even more. Sprinkle some flaky sea salt on top if desired. Enjoy!
