Easy Apple Cinnamon Salad (vegan, gluten-free)
This easy apple cinnamon salad is filled with delicious apples, cinnamon, and pecans for some crunch. It comes together super quick and tastes amazing. The fall flavors really come through and I love all the cinnamon.
Nothing is better than a homemade salad dressing. It just doesn’t compare to store bought. I love a sweet dressing that isn’t overly sweet and full of sugar. This dressing is sweetened with pure maple syrup and my homemade applesauce. The flavor is incredible! I highly recommend using a high quality applesauce or a homemade one.
To make this homemade dressing, you only need a few simple ingredients that are probably all in your pantry already! It is also low in oil which I love because I feel like most dressings are packed with oil. Once you have the dressing done, all you need is some spring mix, pecans, apples, and dried cranberries. You can also add whatever you want to this salad. It is super customizable!
I got this salad dressing from the Oh She Glows cookbook and made a few tweaks. Angela has some great recipes and I’ve loved all her food that I’ve made!

Easy Apple Cinnamon Salad (vegan, gluten-free)
Ingredients
Dressing
- 3 Tbsp apple cider vinegar
- 2 Tbsp fresh lemon juice
- 1 1/2 - 2 Tbsp pure maple syrup
- 1/2 tsp ground cinnamon
- 1/4 tsp fine-grain sea salt
- 1 Tbsp extra-virgin olive oil
- 2 Tbsp unsweetened applesauce (I used homemade)
- 1/8 tsp ground ginger
Salad
- spring mix
- apples, sliced or diced
- toasted pecans
- dried cranberries
- dressing from above
Instructions
- First make the dressing. In a small bowl, whisk together all the ingredients until well combined. Taste to see if you would prefer it to be a little sweeter or more sour. Add more maple syrup for sweeter or lemon for more sour.
- Assemble the salad. Add your desired amount of spring mix, apples, pecans, and dried cranberries. Drizzle the dressing on top. Mix and enjoy!
