Healthy Chocolate Protein Rice Crispy Treats (vegan, gluten-free, oil-free)

These healthy chocolate protein rice crispy treats is the perfect dessert for your Labor Day weekend! It’s a childhood classic but made with healthier and more wholesome ingredients. No nasty corn syrup or marshmallows are needed for these treats! They are a healthy snack or dessert you can feel good about giving your kids too. It’s a definite crowd pleaser because who doesn’t like rice crispy treats, especially ones with chocolate?!

I added some chocolate protein powder to these rice crispy treats to boost the nutrition and keep you feeling full longer. My favorite brand of protein powder is Nuzest. I am very picky about protein powders and Nuzest is the only one that has great ingredients that don’t bother my sensitive stomach. I love the probiotic cacao protein powder, but their regular chocolate one will work too! These healthy, no bake chocolate protein rice crispy treats only require 5 basic ingredients and is so easy to make. Instead of using marshmallows and corn syrup, I used cashew butter and pure maple syrup to help the rice crispy cereal stick together. It has the most amazing flavor and you won’t even miss those marshmallows. You can also use a different nut butter if you want too. However, just make sure it’s the all natural kind with no added sugars.

This healthier alternative is sure to make your family and friends happy. These chocolate protein rice crispy treats are vegan, gluten-free, refined sugar free, and oil-free! It is so tasty and will bring you back to your childhood days. We added some natural sprinkles on top just for fun because my son LOVES sprinkles. Healthy Chocolate Protein Rice Crispy Treats (vegan, gluten-free, oil-free)

These healthy chocolate protein rice crispy treats are a childhood classic made with wholesome ingredients. It is so tasty and easy to make.

Ingredients

  • 3 cups rice crispy cereal
  • 1/4 cup cacao powder (or cocoa powder)
  • 1/4 cup Nuzest probiotic cacao protein powder (use code NUTSABOUTGREENS to save $$)
  • 1/2 tsp sea salt
  • 3/4 cup cashew butter
  • 1/2 cup pure maple syrup
  • Sprinkles for topping, optional

Instructions

  • Line an 8×8 square pan with parchment paper. Set aside.
  • In a large bowl, add the rice crispy cereal, cacao powder, chocolate protein powder, and salt. Stir until well combined.
  • In a microwave safe bowl, add the cashew butter and maple syrup. Stir and microwave for 30 seconds to melt together. Stir again until combined.
  • Pour liquid mixture into the bowl with the rice crispy. Stir with a spatula until everything is well combined and evenly coated. Transfer mixture to the lined pan, spread it out evenly, and press down firmly so it is nicely packed in. Place in the freezer for 1 hour. Once chilled, slice and serve! Keep leftovers in the fridge or freezer.
