Healthy Vegan Protein Waffles (gluten-free, refined sugar free)

These healthy vegan protein waffles are perfect for breakfast and meal prep. They are made with nourishing ingredients, high in protein, plant based, and super easy to make. The whole family will love them and it’s a waffle that will actually keep everyone full.

My kids always want me to make waffles on the weekend and these healthy vegan protein waffles are my go-to. They love these and I make them because they are high in protein and fiber. We like to top it with berries, coconut yogurt, and pure maple syrup.

These waffles are crispy on the outside and soft on the inside. It’s made with less oil and a mixture of all-purpose flour (can sub GF flour) and oat flour to add some more fiber and protein. The banana keeps these waffles soft and moist but it doesn’t give it a strong banana flavor.

Ingredients

  • 1 medium ripe banana, mashed
  • 1 3/4 cup almond milk (or any non-dairy milk)
  • 1 tsp vanilla extract
  • 2 Tbsp extra virgin olive oil (or any oil)
  • 3/4 cup all-purpose flour (use a GF all-purpose flour if needed)
  • 1 cup oat flour
  • 1/2 cup vanilla protein powder (I used Nuzest probiotic vanilla, use code: NUTSABOUTGREENS, link in notes)
  • 1 Tbsp ground flaxseed
  • 1 Tbsp baking powder
  • 1 Tbsp coconut sugar (or any sugar, optional to leave it out)
  • 1/2 tsp cinnamon (optional)
  • 1/4 tsp sea salt

Instructions

  • Heat waffle iron. 
  • In a large bowl, add the flour, oat flour, protein powder, ground flaxseed, baking powder, sugar, cinnamon, and salt. Whisk until well combined. 
  • Add the mashed banana, milk, vanilla, and olive oil. Whisk until just combined. Don’t over mix. 
  • Add the batter to your waffle maker and cook according to your waffle maker’s instructions. Enjoy with some fruit, yogurt, and pure maple syrup. Store leftovers in the fridge in an airtight container or in the freezer.
