Ingredients
- 6.5 oz soba noodles (uncooked)
- 1 large mango, diced
- 1 cup frozen edamame, thawed and cooked
- 2 Tbsp Thai basil, chopped
- 1 Tbsp parsley or cilantro, chopped
- 1 Tbsp sesame seeds
dressing
- 1 Tbsp sesame oil
- 1.5 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 1 tsp pure maple syrup
- 1 tsp minced garlic
- 1/4 tsp ground ginger
- salt and pepper to taste
- 1-2 tsp sriracha (or to taste)
Instructions
- Cook soba noodles according other package’s instructions. Drain, rinse, and set aside.
- Make the dressing by adding all the ingredients into a bowl or glass measuring cup. Whisk until well combined.
- In a large salad bowl or mixing bowl, add noodles, mango, edamame, Thai basil, parsley or cilantro, and sesame seeds. Pour dressing all over and toss until well combined. Taste and adjust seasonings if needed. Enjoy!
