The Super Bowl is coming up and I know those little finger foods and snacks are a must. This muddy buddy popcorn is a fast snack to whip up for your Super Bowl party. If you are not a football fan like me, this is a great snack or dessert to make for a party, birthday, baby shower, or just for fun. This is a healthier take on the traditional muddy buddies. I used plain air popped popcorn instead of chex cereal and no butter. Also, it’s vegan, gluten-free, and oil-free. Watch out because these are so addicting if you are a peanut butter chocolate fan. I could munch on these forever and need someone to take it away from me. If you have a sweet craving or the munchies, you have to make these! Just make sure you don’t eat the whole thing in one sitting. 🙂 Throw it together in 10 minutes and you have yourself a sweet treat to share…or not to share.

Muddy Buddy Popcorn

Ingredients

  • 8 cups air popped popcorn
  • 1/3 cup all-natural peanut butter
  • 1/2 cup non-dairy semi-sweet or dark chocolate chips
  • 1 tsp vanilla extract
  • 1 to 1 1/2 cups powdered sugar

Instructions

  • Pour popcorn into a large bowl and remove any leftover unpopped kernels.
  • In a medium-sized microwaveable bowl, melt the chocolate chips and peanut butter in the microwave, cooking for 30 second intervals and stirring after each interval until the chocolate and peanut butter combination is completely smooth (mine was completely melted after 90 seconds, but it will depend on your microwave). Be careful not to burn your chocolate. Stir in the vanilla extract.
  • Pour over the popcorn and carefully stir to distribute the chocolate evenly. Make sure each popcorn is completely covered. (This may take awhile, but it will eventually even out.)
  • Pour into a large gallon sized ziploc bag or resealable bag. Pour powdered sugar into the bag, seal it, and shake until all the popcorn is covered in powdered sugar.
  • Pour into a large bowl and enjoy! Store leftovers in an airtight container or resealable bag for 2-3 days…if it even lasts that long. :]
