Pumpkin Pecan Granola (vegan, gluten-free, refined sugar free)
My love for homemade granola runs deep and this fall pumpkin pecan granola is so warming and cozy. It has the yummiest flavors and spices that just scream fall. This granola is naturally sweetened with pure maple syrup and has a delicious crunch from the pecans and pumpkin seeds.
I love making homemade granola because it tastes way better than store bought and is much cheaper. These buttery pecans taste amazing with the pumpkin spice and maple syrup. You can definitely switch out half the pecans for walnuts or whatever nuts you like too.
If you want a sweeter granola, you can add 1-2 tablespoons more of pure maple syrup or even add some coconut sugar. I don’t like my granola super sweet, so I thought this was perfect. Once you take it out of the oven, it will crisp up more as it cools. Make sure to let it cool completely before storing. This granola is healthy, so dang delicious, and nourishing.

Pumpkin Pecan Granola (vegan, gluten-free, refined sugar free)

Ingredients
- 3 cups rolled oats
- 1 1/4 cups raw pecans, roughly chopped
- 1/2 cup raw pepitas/pumpkin seeds
- 2 Tbsp ground flaxseed
- 1/4 tsp sea salt
- 2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/3 cup coconut oil
- 1/3 cup pure maple syrup (add 1-2 Tbsp more if you want it sweeter)
- 1/3 cup pumpkin puree
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325 degrees F. Line a baking sheet with a silicone mat.
- Add the oats, pecans, pumpkin seeds, ground flaxseed, spices, and salt together in a large bowl. Mix with a spatula until well combined.
- In a small pot over medium-low heat, add the coconut oil, maple syrup, pumpkin puree, and vanilla and whisk until melted. Pour over the dry ingredients and mix with a spatula until well combined.
- Spread the mixture evenly onto the baking sheet and bake for 40 minutes, lightly flipping the granola at the halfway point and packing it back down into the pan.
- Once the granola is golden brown, remove from oven and let it cool completely. It will crisp up even more as it cools.
- Once cooled, break up the clusters and then transfer to an airtight container. Enjoy!
