Rainbow Soba Noodle Salad (vegan, gluten-free)
This rainbow soba noodle salad is filled with veggies and has the most delicious dressing. The variety of textures makes this salad perfect for a healthy meal prep to enjoy for lunch or dinner.
Soba noodles are higher in protein and fiber than regular noodles. They are made from buckwheat flour which is naturally gluten-free. However, there are lots of brands that make soba noodles with buckwheat and traditional wheat flour. If you are gluten-free, make sure you use soba noodles that are made from 100% buckwheat flour.
All the different veggies in this salad add a delicious crunch that keeps this salad from going soggy. That’s why it is perfect for meal prep! This soba noodle salad is so nourishing, refreshing, and keeps you full too! I love loaded salads and this one is definitely loaded!
The dressing is savory and a little spicy, depending on how much chili garlic sauce or sriracha you use. If you don’t like spice, you can leave it out, but I highly recommend adding a little bit! If you are gluten-free, remember to use tamari instead of soy sauce.
