Rosemary Spiced Roasted Nuts (vegan, gluten-free, oil-free)

These rosemary spiced roasted nuts are inspired by the popular roasted nuts by Trader Joe’s, but way healthier and cheaper. They are completely vegan, gluten-free, refined sugar free, oil-free, and SO flavorful.

Roasted nuts are my weakness and these rosemary spiced roasted nuts are so addicting and easy to make. It takes less than 30 minutes and just a few simple ingredients. The fresh rosemary adds the best flavor and really makes these nuts shine.

The spices in these nuts makes them savory and adds a hint heat. I used some pure maple syrup to give it that slight sweetness to contrast the spice and it is perfection.

These roasted nuts were inspired by the famous Nuts About Rosemary Mix from Trader Joe’s that are so addictive and delicious. However, these homemade ones are made without any oil and processed sugars and are a lot cheaper too!

Rosemary Spiced Roasted Nuts (vegan, gluten-free, oil-free)

Ingredients

  • 3 cups raw nuts/seeds (I used cashews, pecans, walnuts, almonds, & pumpkin seeds)
  • 1 1/2-2 Tbsp fresh rosemary
  • 1/4 tsp cayenne pepper 
  • 3/4 tsp sea salt
  • 1/2 tsp curry powder
  • 2 Tbsp pure maple syrup

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat. 
  • In a large bowl, add all the ingredients. Stir until well combined. Pour nut mixture onto the baking sheet. 
  • Roast the nuts for 20 minutes, stirring at the halfway point. Let it cool on the pan for at least 15 minutes. Enjoy! Once cooled, store leftovers in an airtight container.
