Ingredients
salad
- 2-3 handfuls of arugula (about 3 cups)
- 1/2 cup uncooked quinoa
- 2 peaches, diced
- 1 avocado, diced
- 1 cup fresh corn
- 1/3 cup basil, chopped
- 1/4 cup shelled pistachios
- 1/4 cup vegan feta
dressing
- 3 Tbsp extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 1 Tbsp pure maple syrup
- 1 tsp dijon mustard
- 1/4 tsp sea salt
- 1/8 tsp black pepper
Instructions
- Cook quinoa according to package’s instructions. Let it cool until it reaches room temperature.
- Make the dressing in a small bowl. Whisk until well combined.
- In a large bowl, add all the salad ingredients. Pour dressing all over the top. Toss salad until everything is well combined. Enjoy!
