Dubai Chocolate Strawberry Yogurt Parfait (vegan, Dubai Chocolate Strawberry Yogurt Parfait (vegan, gluten-free) 🍓🍫

I’ve been seeing the viral Dubai chocolate strawberry cup everywhere and I just can’t justify paying $20 for a cup 😬! I wanted to make a healthier version and turn it into a yogurt parfait. This healthier Dubai chocolate strawberry yogurt parfait is so dreamy, easy to make, and completely vegan and gluten-free. Instead of using kataifi (or shredded phyllo dough), I used desiccated coconut shreds and it turned out so good, I could just spoon it 🤤! The layers of creamy yogurt, juicy strawberries, nutty pistachio and coconut spread, and dark chocolate is heavenly 🤌! This would be perfect for Mother’s Day breakfast, brunch, or dessert! I’m still dreaming about this parfait! Recipe is below so make sure to hit save! 💫

Ingredients:
2 tsp extra virgin olive oil
3/4 cup unsweetened desiccated shredded coconut
heaping 1/3 cup @eatpistakio pistachio spread, plus more for drizzling
1 cup dairy-free yogurt (I used @foragerproject plain unsweetened)
1/3 cup non-dairy chocolate chips (I used @hukitchen)
1 tsp coconut oil 
1 cup sliced strawberries 

Heat olive oil in a medium skillet over medium low heat. Add shredded coconut and stir continuously until coconut starts to turn golden. Once golden, turn heat off and add the pistachio spread. Stir until everything is well combined, adding more pistachio spread if needed. Add the chocolate chips and coconut oil to a small bowl and microwave in 30 second increments until chocolate is melted, stirring after each increment. Assemble the parfait by layering yogurt, strawberries, coconut pistachio mixture, a drizzle of melted dark chocolate, a drizzle of pistachio spread, and more strawberries. Enjoy!

Need a quick and easy treat that hits the spot? These easy churro croffles, or croissant waffles, with a chocolate dipping sauce are SO good and comforting 🤌. The warm, buttery croffles coated in cinnamon sugar gives me all the churro vibes. The chocolate sauce takes it to the next level, so please don’t leave it out! It’s the perfect weekend treat that everyone will love! Recipe is below, so don’t forget to hit save! 💫

Ingredients:
1 (8 oz) can crescent rolls (make sure it’s vegan)
1/4 cup pure organic cane sugar
1.5 tsp cinnamon 
1/3 cup dairy-free chocolate chips (I used @hukitchen)
1 tsp coconut oil 
 
Preheat waffle iron. Roll out and separate the crescent rolls into triangles. Roll up the crescents starting from the widest end. Grease waffle iron with avocado oil or olive oil. Place crescent rolls in the waffle iron (I fit 4) and cook until golden. Make the cinnamon sugar by combining the sugar and cinnamon in a shallow bowl. Dip each croffle in the cinnamon sugar, spooning sugar on top on both sides. Make the chocolate dipping sauce by melting the chocolate chips and coconut oil in the microwave in 30 second increments, until melted, stirring after each increment. Careful not to burn the chocolate. Dip churro croffles in chocolate and enjoy!

Anyone else annoyed that all of the Easter candy at the store has food dyes in them? Make these super easy chocolate peanut butter Easter eggs instead! You can make them whatever color you like using natural food dyes or blue spirulina powder to get that pretty robin’s egg blue 😍. They are SO easy and only take a few simple ingredients. There are no refined sugars and are completely vegan and gluten-free. It’s a healthier version of a Reese’s egg and much cheaper than dying eggs, especially with the crazy egg prices these days 😬! These are so good and taste way better than store bought candy! Recipe is below! 💫

Ingredients:
1 cup natural peanut butter 
3 Tbsp coconut flour
1/4 cup pure maple syrup
1 1/2 cup white chocolate chips (vegan)
2 tsp coconut oil
1/8 tsp blue spirulina 
2 drops natural red food dye (mine is from beets)
cacao powder for topping, optional

Add the peanut butter, coconut flour, and maple syrup into a bowl. Mix until combined. Set aside for 5-10 minutes to thicken up. Shape into eggs and place on a parchment lined plate or baking sheet. Freeze for 20 minutes. Melt white chocolate chips with coconut oil in 30 second increments until melted, stirring in between each increment. Dived into two bowls and add spirulina to one and the natural red dye to another. Stir until you get your desired colors. Dip each egg into the chocolate and place back onto the baking sheet. Freeze to set. Then lightly sprinkle cacao powder on top of the eggs. Enjoy! Store in the fridge or freezer.

This lemon raspberry overnight oats is refreshing, bright, and perfect for spring 🌷. With the weather warming up, I just love having overnight oats prepped for a quick and nourishing breakfast. The chia seeds give a protein and fiber boost too 👊. The fresh pops of juicy raspberries with the tart lemon is so delicious. This healthy overnight oats is sure to keep you fueled for the morning and the perfect way to start the day. Recipe is below so make sure to hit save! 💫

Ingredients: 
1/2 cup rolled oats
1 Tbsp chia seeds
2 Tbsp @nuzest probiotic vanilla protein powder (use code: nutsaboutgreens to save $$)
3/4 cup almond milk (or any non-dairy milk)
1 Tbsp pure maple syrup, or to taste
2 Tbsp coconut yogurt (I used @cocojune_organic)
1.5 Tbsp cashew butter or tahini (or any nut butter)
2 Tbsp lemon juice (about half a lemon)
1/2 cup chopped raspberries

Add everything into a jar or container and stir until well combined. Refrigerate for at least 4 hours or overnight. Top with extra yogurt, raspberries, and lemon zest if desired! Enjoy!

This tahini pistachio date bark is such a delicious combo and makes for the perfect healthy treat. It’s sweet and salty, nutty, and chocolatey 🤌. It only takes a few minutes to make and you can store it in your freezer for whenever that sweet craving hits. Pistachio and chocolate has been going viral and for good reason! It’s so good with dates and the tahini adds another layer of nuttiness. I love all the textures from the chewy dates to the crunchy pistachios. I could not stop eating this and it definitely did not last long in my freezer! Recipe is below! 💫

Ingredients: (no specific measurements, just measure with your heart ☺️)
✨ medjool dates, pitted 
✨ tahini
✨ chocolate chips (about 1/3-1/2 cup)
✨ 1 tsp coconut oil
✨ chopped pistachios
✨ shredded coconut 
✨ flaky sea salt 

Place a piece of parchment paper on a baking sheet. Place the pitted dates in a rectangular shape touching each other. Place another piece of parchment on top and flatten dates with a rolling pin or glass cup. Lift the top piece of parchment paper off. Drizzle tahini on top. Melt chocolate chips with 1 tsp of coconut oil in the microwave in 30 second increments until melted, stirring after each increment. Drizzle melted chocolate over the tahini layer. Generously sprinkle chopped pistachios all over the top and shredded coconut. Sprinkle some flaky sea salt on top. Freeze for 20 minutes to set. Slice or break apart and enjoy!
