Cook rice according to package directions. I cook mine in the rice cooker.
Once rice is done, add oil to a large pot over medium high heat. Add the onions and saute until golden. Add the garlic and saute for 30 seconds. Add the kale (or any greens), turmeric, ginger, TJ’s vegan chicken-less seasoning salt, sea salt, and pepper. Saute until greens are wilted.
Add the coconut milk, stir, and simmer for 4-5 minutes. Turn heat off and add in the rice. Stir until everything is evenly combined. Taste and adjust flavors if needed by adding more salt and/or pepper. Enjoy!
