Easter is coming up this Sunday and I wanted to share recipes that will be great for Easter all week. I’m starting with this creamy coconut golden rice that is our family’s favorite! It’s not only good for Easter Sunday, but it’s definitely good for ANY day. During this quarantine and social distancing time, this creamy coconut golden rice has been on repeat. I probably make this once a week…it’s that good! My husband and toddler love it, which is a win in my books. If you want to add some protein to it, it tastes amazing paired with some pan-fried tofu or crispy chickpeas. This creamy golden rice is SO easy to make and filled with good for you ingredients. I love adding turmeric to anything and everything because of its anti-inflammatory properties. The coconut milk makes this rice incredible creamy as well as adding some healthy fats. If you have access to a Trader Joe’s, their vegan chicken-less seasoning salt adds so much flavor to this rice. Anyways, I hope you have a chance to make this rice because it’s so comforting, delicious, healthy, and makes you feel great afterwards!

Creamy Coconut Golden Rice (vegan, gluten-free)

Ingredients

  • 1 1/2 cups white jasmine rice, uncooked
  • 1 tbsp extra virgin olive oil (you can also use avocado or coconut oil)
  • 1/2 large yellow onion, diced
  • 3 cloves garlic, minced
  • 5 cups chopped kale (or any greens like spinach, bok choy, etc)
  • 1 tsp ground turmeric
  • 1/2 tsp ground ginger
  • 1 tsp Trader Joe’s Vegan Chicken-less Seasoning Salt (or 1/2 tsp garlic powder + 1/2 tsp onion powder)
  • 3/4-1 tsp sea salt (more if you didn’t use the TJ’s seasoning salt)
  • 1/4 tsp fresh cracked black pepper
  • 1 can (14 oz) full-fat coconut milk

Instructions

  • Cook rice according to package directions. I cook mine in the rice cooker.
  • Once rice is done, add oil to a large pot over medium high heat. Add the onions and saute until golden. Add the garlic and saute for 30 seconds. Add the kale (or any greens), turmeric, ginger, TJ’s vegan chicken-less seasoning salt, sea salt, and pepper. Saute until greens are wilted.
  • Add the coconut milk, stir, and simmer for 4-5 minutes. Turn heat off and add in the rice. Stir until everything is evenly combined. Taste and adjust flavors if needed by adding more salt and/or pepper. Enjoy!
