Combine all ingredients in the slow cooker, except for the bbq sauce. Stir and cook on low for 7-8 hours or on high for 3-4 hours. Stir in the bbq sauce at the end.
Enjoy!!! Serve with vegan buns, bread, or brown rice. Store leftovers in an airtight container in the fridge.
If making in the Instant Pot, add all the ingredients to the pot (except for the bbq sauce), seal, and cook on high pressure for 17 minutes. Then let it naturally release. Stir in bbq sauce at the end.
