This is a kid friendly recipe that everyone will love. The rich flavors developed in this crockpot dinner are so dang good that no one would ever know it took two seconds for you to prepare. Just put everything in the crockpot before you leave in the morning and come home to a delicious and healthy dinner. I love this when I have to work late nights and don’t want to make dinner when I come home.

These lentil sloppy joes are vegan, oil-free, dairy free, gluten-free, and oh so healthy. It’s high in fiber and protein thanks to the lentils. Your family, including the kiddos, won’t be complaining about this meal and it makes for great leftovers too!

Crockpot Lentil Sloppy Joes (Instant Pot friendly)

These crockpot lentil sloppy joes is the perfect dinner for those busy nights that everyone will love. It's healthy, yummy, and kid approved!

Crockpot Lentil Sloppy Joes

Ingredients

  • 1 cup dried brown or green lentils
  • 1 1/2 cups vegetable broth
  • 28 -oz can crushed tomatoes or diced tomatoes
  • 1/4 cup tomato paste
  • 1/2 yellow onion, chopped fine
  • 3 tbsp pure maple syrup
  • 1 tbsp yellow or dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp minced garlic
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp smoked paprika
  • 1 tbsp chili powder
  • 1 tsp sea salt
  • dash of black pepper
  • 3 tbsp vegan bbq sauce

Instructions

  • Combine all ingredients in the slow cooker, except for the bbq sauce. Stir and cook on low for 7-8 hours or on high for 3-4 hours. Stir in the bbq sauce at the end.
  • Enjoy!!! Serve with vegan buns, bread, or brown rice. Store leftovers in an airtight container in the fridge.
  • If making in the Instant Pot, add all the ingredients to the pot (except for the bbq sauce), seal, and cook on high pressure for 17 minutes. Then let it naturally release. Stir in bbq sauce at the end.
