Preheat oven to 340 degrees F. Line a baking sheet with parchment paper or a silicon baking mat.
In a large mixing bowl, combine the oats, almonds, walnuts, salt, and cinnamon. Stir with a spatula until well combined.
In a small pot on medium heat, add the coconut oil and maple syrup. Heat until coconut oil is melted, stirring frequently. Turn off heat and add the vanilla extract. Stir to combine. Add the mixture to the oat mixture. Stir until everything is evenly and well combined.
Pour granola onto the baking sheet and bake for 35 minutes, carefully flipping half way during baking. Granola should be a nice golden color when done. Remove from oven and let it cool without stirring it. It will crisp up more as it cools. Place in an airtight container when cooled completely. Enjoy!
