Easy French Toast Granola (vegan, gluten-free)

I always have granola in the pantry and usually just make the same two kinds over and over again (because they are mine and my husband’s favorites), but I decided to change it up and make this super easy french toast granola. I love cinnamon in anything and this french toast granola literally tastes like a healthier cinnamon toast crunch. It’s so good, yet so simple. You can switch up the nuts if you want and make it your own. I love how fast this granola comes together and it’s way better than store bought. A lot of granola you find at the store is loaded with unhealthy oils and a large amount of sugar. This french toast granola is vegan, gluten-free, refined sugar free, and perfect for breakfast! I love eating it with some nut milk, dairy-free yogurt, and on top of some oatmeal. Sometimes I even grab a handful when I just want a snack. It’s so delicious and I never get sick of homemade granola!

Easy French Toast Granola (vegan, gluten-free)

Ingredients

  • 4 1/4 cups rolled oats
  • 1 cup chopped raw almonds
  • 1/2 cup chopped raw walnuts
  • scant 1/2 tsp sea salt
  • 2 heaping tsp ground cinnamon
  • 1/2 cup coconut oil
  • 1/2 cup pure maple syrup
  • 2 tsp vanilla extract

Instructions

  • Preheat oven to 340 degrees F. Line a baking sheet with parchment paper or a silicon baking mat.
  • In a large mixing bowl, combine the oats, almonds, walnuts, salt, and cinnamon. Stir with a spatula until well combined.
  • In a small pot on medium heat, add the coconut oil and maple syrup. Heat until coconut oil is melted, stirring frequently. Turn off heat and add the vanilla extract. Stir to combine. Add the mixture to the oat mixture. Stir until everything is evenly and well combined.
  • Pour granola onto the baking sheet and bake for 35 minutes, carefully flipping half way during baking. Granola should be a nice golden color when done. Remove from oven and let it cool without stirring it. It will crisp up more as it cools. Place in an airtight container when cooled completely. Enjoy!
