Healthy Red Velvet Waffles (vegan, gluten-free, oil-free, refined sugar free)

These healthy red velvet waffles are super easy to make, nourishing, and so delicious. It's the perfect Valentine's Day breakfast!

Ingredients

  • 2 cooked beets (4 oz)
  • 2 cups rolled oats
  • 1 1/4 cup almond milk (or any non-dairy milk)
  • 1 1/2 tbsp cacao powder
  • 1 tsp vanilla extract
  • 2 tbsp ground flaxseed
  • 1/4 tsp salt
  • 1 tbsp baking powder
  • 3 tbsp pure maple syrup
  • 1-2 tsp beet juice

Instructions

  • Add all ingredients to your high speed blender. Blend on high until smooth. Don’t over blend, just enough until everything is smooth.
  • Let the batter rest for 10-15 minutes to thicken. Do NOT skip this step. It allows time for the oats to absorb the liquid and helps your waffles/pancakes turn out fluffier.
  • If making waffles, preheat waffle maker. Cook waffles according to waffle maker’s instructions. I like to cook these waffles on medium high heat and cook them a little longer than normal to get a crispier exterior. Top with your favorite toppings!
  • If making pancakes, heat a skillet on medium heat. Spray with oil and scoop about 1/4 cup of batter onto the pan. Cook until it starts to bubble on top, about 3-4 minutes. Flip and cook until golden on both sides. Keep the heat at medium or medium low to ensure that the center gets cooked through. Top with your favorite toppings!
