Add all ingredients to your high speed blender. Blend on high until smooth. Don’t over blend, just enough until everything is smooth.
Let the batter rest for 10-15 minutes to thicken. Do NOT skip this step. It allows time for the oats to absorb the liquid and helps your waffles/pancakes turn out fluffier.
If making waffles, preheat waffle maker. Cook waffles according to waffle maker’s instructions. I like to cook these waffles on medium high heat and cook them a little longer than normal to get a crispier exterior. Top with your favorite toppings!
If making pancakes, heat a skillet on medium heat. Spray with oil and scoop about 1/4 cup of batter onto the pan. Cook until it starts to bubble on top, about 3-4 minutes. Flip and cook until golden on both sides. Keep the heat at medium or medium low to ensure that the center gets cooked through. Top with your favorite toppings!
