Healthy Red Velvet Waffles (vegan, gluten-free, oil-free, refined sugar free)

These super easy and healthy red velvet waffles are perfect for your Valentine’s Day morning. They are made from wholesome ingredients, contain no food dyes, and taste amazing! You can also turn this batter into pancakes too! Top it off with some vegan yogurt, cacao nibs, heart shaped strawberries, and maple syrup.

I love an easy breakfast and this only takes a few minutes to whip up the batter. All you have to do is put all the ingredients into the blender and blend away! It’s that easy! Make sure you let the batter rest for 10-15 minutes. Don’t skip this part because it helps thicken the batter and make your waffles/pancakes fluffier!

These healthy red velvet waffles are mainly made with oats, ground flaxseed, cacao powder and beets! Yes, beets! The beets give it the reddish color, but don’t worry, you can’t taste it at all! It’s super nourishing and such a fun breakfast that the whole family can enjoy. Even my son loved them!

Healthy Red Velvet Waffles (vegan, gluten-free, oil-free, refined sugar free)

These healthy red velvet waffles are super easy to make, nourishing, and so delicious. It's the perfect Valentine's Day breakfast!

Ingredients

  • 2 cooked beets (4 oz)
  • 2 cups rolled oats
  • 1 1/4 cup almond milk (or any non-dairy milk)
  • 1 1/2 tbsp cacao powder
  • 1 tsp vanilla extract
  • 2 tbsp ground flaxseed
  • 1/4 tsp salt
  • 1 tbsp baking powder
  • 3 tbsp pure maple syrup
  • 1-2 tsp beet juice

Instructions

  • Add all ingredients to your high speed blender. Blend on high until smooth. Don’t over blend, just enough until everything is smooth.
  • Let the batter rest for 10-15 minutes to thicken. Do NOT skip this step. It allows time for the oats to absorb the liquid and helps your waffles/pancakes turn out fluffier.
  • If making waffles, preheat waffle maker. Cook waffles according to waffle maker’s instructions. I like to cook these waffles on medium high heat and cook them a little longer than normal to get a crispier exterior. Top with your favorite toppings!
  • If making pancakes, heat a skillet on medium heat. Spray with oil and scoop about 1/4 cup of batter onto the pan. Cook until it starts to bubble on top, about 3-4 minutes. Flip and cook until golden on both sides. Keep the heat at medium or medium low to ensure that the center gets cooked through. Top with your favorite toppings!
