Preheat oven to 325 degrees F. Line a baking pan with a silicone mat.
In a large bowl, add the oats, chopped nuts/seeds, salt, cinnamon, and ground flaxseed. Stir with a spatula until combined.
In a small pot on medium low heat, melt the coconut oil and maple syrup. Stir and once melted, turn off heat. Stir in the vanilla extract. Add mixture to the large bowl. Stir until everything is well combined.
Pour granola mixture onto the prepared pan and spread it into an even layer. Bake for 35-40 minutes until lightly golden brown, stirring halfway then pressing the stirred granola down with your spatula to create an even layer. Sprinkle on the dried cranberries once granola is done. Let it cool completely without disturbing/mixing. Once cooled, break into chunks or stir it around with a spatula. Store in an airtight container. Enjoy!
