You probably know by now that I am a granola fanatic and I literally eat it multiple times a day. Homemade granola is one of my favorite things to have for breakfast or as a snack. I have quite a few granola recipes on the blog but I decided I needed a simple healthy granola for those who just want something basic.

This simple granola is great sprinkled on oatmeal, smoothie bowls, or yogurt bowls. It is easily customizable and feel free to use whatever nuts and seeds you like! It is naturally sweetened with pure maple syrup and not overly sweet like most store bought granola. Once you try homemade granola, you will never go back to store bought.

I am obsessed with granola and I could eat it with everything. It’s crunchy, perfectly sweet, nutty, and so addicting! Made with wholesome ingredients, this healthy granola will keep you fueled and satisfied for the morning. It’s packed with good for you fats, protein, and fiber too! I love just eating a bowl of granola with bananas and some almond milk.

This simple healthy granola is a great basic granola that tastes delicious and made with wholesome ingredients, way better than store bought!

Simple Healthy Granola (vegan, gluten-free, refined sugar free)

Ingredients

  • 4 cups rolled oats
  • 1 1/2 cups nuts/seeds (I used a combination of chopped walnuts, almonds, pumpkin seeds, and sunflower seeds)
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3 tbsp ground flaxseed
  • 1/2 cup coconut oil
  • 1/2 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup dried cranberries

Instructions

  • Preheat oven to 325 degrees F. Line a baking pan with a silicone mat.
  • In a large bowl, add the oats, chopped nuts/seeds, salt, cinnamon, and ground flaxseed. Stir with a spatula until combined.
  • In a small pot on medium low heat, melt the coconut oil and maple syrup. Stir and once melted, turn off heat. Stir in the vanilla extract. Add mixture to the large bowl. Stir until everything is well combined.
  • Pour granola mixture onto the prepared pan and spread it into an even layer. Bake for 35-40 minutes until lightly golden brown, stirring halfway then pressing the stirred granola down with your spatula to create an even layer. Sprinkle on the dried cranberries once granola is done. Let it cool completely without disturbing/mixing. Once cooled, break into chunks or stir it around with a spatula. Store in an airtight container. Enjoy!
