No sugar added to the batter, gluten-free, oil-free, and vegan. I topped it off with some peanut butter, fresh cut up fruit, coconut yogurt, and pure maple syrup.

I love how these are wholesome, protein packed, and loaded with fiber. Who knew a waffle can be so healthy and taste so good. Ingredients

  • 2 cups rolled oats
  • 1 medium to large very ripe banana
  • 1 1/4 cups unsweetened almond milk (or any non-dairy milk)
  • 1 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp ground flaxseed
  • 1/4 tsp salt
  • 1 tbsp baking powder

Instructions

  • Heat your waffle iron on medium-high. Put all ingredients into the blender and blend until smooth. Then add the baking powder and blend only until combined (about 5-10 seconds). Let your batter rest for 5 minutes. Don’t skip this step!!!
  • If your waffle iron is not non-stick, I would highly recommend spraying it with non-aerosol oil or brushing it with oil. Pour batter into waffle iron and cook according to your waffle iron’s instructions. (I like to cook them a little longer so the edges get a little crispier, then I don’t get mushy waffles.)
  • Enjoy with your favorite toppings and some pure maple syrup!
