Healthier Furikake Chex Mix (vegan)

This vegan healthier furikake chex mix is so dang ADDICTING. It will become your new favorite chex mix ever. I literally cannot stop eating it. It’s the perfect combination of savory and sweet and best of all, made with no corn syrup.

The crunchiness, saltiness, sweetness, and nuts are down right irresistible! I find myself turning on a show and mindlessly munching on this furikake chex mix. I cannot stop! It’s perfect for the holidays, gifting to your friends and family, and serving guests.

If you haven’t tried furikake before, it’s a Japanese seasoning made from nori. It typically contains fish in it, but there are vegan options too. This nori furikake is my favorite one that is vegan and you can get it on Amazon, but I got this at my local Asian grocery store. I love to put it on rice, veggies, basically anything. It’s so good on this chex mix!

This chex mix is a super easy recipe, you just need some patience as it takes a long time to bake at a lower temperature to achieve that crispiness. It will crisp up more as it cools too. If you want something delicious to munch on, this healthier furikake chex mix is a winner! Traditionally, furikake chex mix is made with corn syrup but this one is just lightly sweetened with pure maple syrup.

Healthier Furikake Chex Mix (vegan)

This healthier furikake chex mix is so addicting, delicious, and the perfect combo of sweet and salty. It's easy to make and the best snack!

Ingredients

  • 6 heaping cups Chex cereal (you can use rice or corn chex or both)
  • 2 cups pretzels
  • 1 1/2 cups sesame sticks (I get mine at Trader Joe’s, Sprouts, or Whole Foods)
  • 1 cup nuts (peanuts, cashews, walnuts, or almonds)
  • 1/4 cup vegan butter, melted
  • 1/3 cup pure maple syrup
  • 1 Tbsp low-sodium soy sauce
  • 1/4 tsp salt
  • 1/3 cup vegan furikake (see post for which one I use)

Instructions

  • Preheat oven to 250 degrees F. Line a baking sheet with a silicone mat or parchment paper.
  • In a very large bowl, add the Chex, pretzels, sesame sticks, and nuts. Stir with a spatula until well combined.
  • In a small bowl, add the melted butter, maple syrup, soy sauce, and salt. Stir until well combined. Pour over Chex mixture. Stir with a spatula until everything is evenly coated. Then sprinkle the furikake over the mixture. Stir until well combined.
  • Spread chex mix over the lined pan. Bake for 70-75 minutes, stirring every 15 minutes. Let it cool on the pan completely. It will crisp up more as it cools. Enjoy! Store in an airtight container.
