Shaved Brussels Sprouts and Kale Citrus Salad (vegan, gluten-free, refined sugar free)
Start the new year off with this shaved brussels sprouts and kale citrus salad. It is so refreshing, nourishing, and delicious. The shaved brussels sprouts and kale give this salad a nice crunch without getting soggy and the citrus adds a sweet and tangy flavor.
Salads don’t have to be boring and this citrus salad is beautiful and so fresh. It’s packed with vitamin C and many other nutrients that is great for the body. I love all the colors from the citrus and pomegranate. It’s super easy to make and perfect for lunch or dinner.
I used grapefruit and a navel orange for this salad, but you can use any variety of citrus. The shaved brussels sprouts and kale gives this salad a heartier feel and is loaded with fiber. This salad is vegan, gluten-free, and refined sugar free too.

Shaved Brussels Sprouts and Kale Citrus Salad (vegan, gluten-free, refined sugar free)
Ingredients
salad:
- 3 cups shaved brussels sprouts
- 3 cups chopped kale
- 1 grapefruit, sliced
- 1 orange, sliced
- 1/3 cup vegan feta
- 1/3 cup pomegranate arils
- 1/3 cup dried cranberries
- heaping 1/3 cup pecans, chopped
dressing:
- 3 Tbsp extra virgin olive oil
- 2 Tbsp fresh orange juice
- 1 Tbsp lemon juice
- 1 Tbsp pure maple syrup
- 1 tsp dijon mustard
- 1 Tbsp red wine vinegar
- 1/4 tsp sea salt
- couple twists of fresh cracked black pepper
Instructions
- Make the dressing by combining all the dressing ingredients into a small bowl or glass measuring cup. Whisk until well combined.
- In a large bowl, add the shaved brussels sprouts and kale. Drizzle about 3/4 of the dressing over it and massage the brussels and kale with your hands. Let it sit for 5 minutes.
- Add the rest of the salad ingredients into the bowl. Drizzle the rest of the dressing on top. Toss to combine and enjoy!
