Blender Persimmon Oat Waffles (vegan, gluten-free, oil-free)

These easy blender persimmon oat waffles are so delicious and made with the super sweet pulp from Hachiya persimmons. I love persimmon season and they add a tasty, honey-like flavor to these waffles. They are incredibly easy to make and so nourishing as well. It’s like eating oatmeal in waffle form.

Make sure to use the super soft kind of persimmons, Hachiya, and not the firm ones called Fuyu. You will need to wait until your Hachiya persimmon gets very very soft and ripe to be able to use it. They are not supposed to be eaten when firm. Then you just scoop out the flesh and place it in the blender with the other ingredients.

You can also use this batter to make pancakes if you don’t have a waffle maker. Just heat up a pan and cook it like you do regular pancakes. It’s important to let the batter sit for at least 10 minutes for the oats to absorb the liquid and thicken up the batter. If not, you will get a very runny and flat pancake.

These blender persimmon oat waffles are made with wholesome ingredients and will keep you full all morning. It’s packed with protein, fiber, and healthy fats. I topped my waffles with coconut yogurt, more persimmon pulp (I had a lot of persimmons that were ripe), and homemade granola. They are absolutely delicious and so cozy on a cold winter day. Blender Persimmon Oat Waffles (vegan, gluten-free, oil-free)

These blender persimmon oat waffles are delicious and made with the pulp from ripe Hachiya persimmons. They are healthy and so easy to make!

Ingredients

  • 1 cup rolled oats
  • 1 super ripe Hachiya persimmon
  • 2 tbsp ground flaxseed
  • 1 tbsp baking powder
  • 1/8 tsp sea salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp pure maple syrup
  • 3/4 cup almond milk (or any non-dairy milk)

Instructions

  • Add all ingredients to your blender (I used my Vitamix). Blend until smooth, scraping down the sides half way through.
  • Let the batter sit for 10 minutes. Don’t skip this step! It helps the batter thicken.
  • Preheat waffle maker. Cook waffles according to waffle maker’s instructions. I like to cook these waffles on high heat and cook them a little longer than normal to get a crispier exterior. Top with your favorite toppings!
  • You can also make these into pancakes by heating a skillet on medium heat. Spray some oil on the pan and scoop batter onto heated pan. Cook until golden, then flip and cook until golden on the other side. Top with your favorite toppings! Enjoy!
