Easy Apple Chia Seed Jam

It’s Thanksgiving WEEK and I’m so excited! The grocery store is a madhouse right now, so I hope you all have done your Thanksgiving day shopping already. If you have a couple of apples laying around and want to make a compote/jam that isn’t cranberry, this easy apple chia seed jam is perfect for you! It is super easy to whip up and pairs very well with rolls, or I like to put a dollop of it in my oatmeal for breakfast. I have an apple tree in my backyard, so I think I’ll be making this often. It’s great in sandwiches with peanut butter or your favorite nut butter. Sometimes I even like taking a spoonful of it and eating it just on it’s own. I know, I’m weird. I love the sweetness from the apples in this chia seed jam and you can definitely add more or less maple syrup to it according to your sweetness preference. It’s way healthier than store bought jam and doesn’t have a bunch of added sugars/thickening agents. The chia seeds are a natural thickener and you can hardly taste them! Also, you can make this jam as smooth as you like it or as chunky as you like it by either blending it with an immersion blender or mashing it with a masher/backside of a wooden spoon. This is great to have on hand in your fridge!

Easy Apple Chia Seed Jam

Easy Apple Chia Seed Jam

Ingredients

  • 2 cups apples, peeled, cored, and diced (about 2 big apples)
  • 1/2 cup water (or apple juice)
  • 1 tbsp lemon juice
  • 1-2 tbsp pure maple syrup
  • 2 tbsp chia seeds
  • 1/2 tsp cinnamon

Instructions

  • In a small pot, combine all the ingredients. Stir until well mixed. Cook on the stove on medium high heat until boiling. Turn down the heat to low and simmer for 20-25 minutes, or until apples are soft.
  • Mash apple mixture with a masher or blend with an immersion blender until it is as smooth or chunky as you like it.
  • Let it sit and cool for 15 minutes to thicken even more. Store in an airtight container in the refrigerator. Enjoy!
