Easy Lemon Guacamole
Cinco de Mayo is coming up and I’m super stoked! It’s an excuse for me to eat rice, beans, and guac all day long. Let’s just say I can eat those three things every single day without getting sick of it. Just ask my husband and he will tell you that I either crave rice and beans or guac and chips. This super easy lemon guacamole is a definite must have at your Cinco de Mayo celebration this year. Whether you are celebrating by yourself or with friends and family, everyone should be eating guac on that day, or in my case, everyday! I always stock up on avocados at the grocery store for my regular guac and chips snack. I also like putting this guac on a tortilla to make some avocado quesadillas. I love how creamy avocados taste and they are a great way to incorporate healthy fats in your diet. This guac recipe has an extra kick of lemon in it because I love lemon so much. If you aren’t a big fan of lemon, don’t put as much in your batch. You can definitely customize the spices to your own taste buds.
Easy Lemon Guacamole
Ingredients
- 2 avocados
- juice of 1/2 a lemon or 1 Tbsp lemon juice
- 1/2 tsp sea salt or salt to taste
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp chili powder
- few dashes of chipotle chile powder
- fresh cracked pepper
Instructions
- Cut the avocados in half and carefully remove the core. Scoop out the flesh and place in a bowl. Mash with a fork and add in the lemon juice.
- Add the rest of the ingredients and mix well. Adjust seasonings to taste.
- Serve with chips and enjoy!
