Lemon Coconut Energy Bites (vegan, gluten-free, oil-free)
These lemon coconut energy bites are the perfect Spring snack. They are bright, lemony, filling, and delicious. Packed with good for you fats, fiber, protein, and oats to keep you fueled. They are also great for you nursing mamas too! The lemon and coconut is such a great combo, especially in energy bites.
It is super easy to make and you basically just throw everything into the food processor. If you don’t have a food processor, you could easily make these with just a bowl and spatula. They just will be a little harder to shape into balls.
I love to eat an energy bite before I workout and after lunch. It’s sweet, tangy, and tastes like a yummy treat!

Ingredients
- 1 1/4 cup rolled oats
- 3 tbsp ground flaxseed
- 1/4 cup finely shredded coconut (unsweetened)
- 3 tbsp pure maple syrup
- 1 big lemon zested and juiced
- 1/3 cup cashew butter
- 1/8 tsp sea salt
- 1/2 tsp vanilla extract
Instructions
- Add all ingredients to a food processor and blend until combined. Roll into balls (I used my 1.5 Tbsp cookie scoop). I got about 12 balls. Store in an airtight container in the fridge or freezer. Enjoy!
